Our destination is the Residence Dock Ouest, set apart from the bustle of the city centre and yet with direct access to the historical quarter. The impressive curved, corner building, with its strips of wood that create a play of striped light inside and out, is hard to miss. In keeping with the reputation of the famous Chef who owns it, it breathes grounded simplicity, innovative flair and a dash of dazzle. What more could one expect from Paul Bocuse, vanguard pioneer of Nouvelle Cuisine and famed Ambassador of the French Culinary tradition?
