The young boy dips his spoon into the amber jar of honey and twists the metallic utensil in a bid to save every drop. I watch as he sneakily spoons the overflowing, caramel coloured liquid into his mouth and smirks mischievously. I suppress a laugh as the mother exclaims and speaks rapidly in French at the child. Did you know that Paris’ urban rooftop hives decorate many famous rooftops? A celebrated and cherished insect in France, the bee produces masses of honey from the many beautiful flowers and gardens in the city. Sitting in Novotel Rueil Malmaison, I spread a thick layer of honey on a warm piece of toast and take a heavenly bite.
